ACORN FLOUR
Carefully dried and milled, our flour preserves the aroma, texture, and nutritional density of the acorn. It is a gluten-free flour with a gentle sweetness and subtle nutty notes that add richness and complexity without overpowering other flavors. It can serve the role of other specialty flours (almond, chestnut, carob, legume flours, etc.) or replace part of the cereal flour in any recipe to enhance its nutritional profile and flavor complexity.

WHOLE DRIED ACORN
Whole dried acorn (or halves), peeled. Our drying process removes the astringency caused by the high tannin content found in fresh acorns while preserving the rest of their nutrients.
With physical characteristics similar to dried chestnuts.

Rehydratable while retaining maximum nutritional value

Can be fermented, boiled, milled, crushed, or used to make beverages

FRESH SWEET ACORN
Select sweet acorns are found only on a few holm oak trees. Unlike most acorns, they are delicious without any processing, whether eaten raw or roasted.
It is a fresh seasonal product and is therefore only available from December to March.
These sweet acorn varieties are the result of 10 years of ethnobotanical fieldwork carried out as part of our Balanotrees project.
