Acorn, wild versatility
Quercània was created to recover an ancestral ingredient from our environment — the acorn — and transform it into a functional, healthy, and versatile alternative for today’s food industry.
In a context where consumers demand more natural and sustainable products, Quercània offers a value-added proposal. We transform acorns into an ingredient adapted to the needs of brands, formulators, and distributors looking to create and offer new food concepts with their own identity. Our products — acorn flour, granules, and dried acorn — provide functional and nutritional benefits to your products, with multiple applications.
But Quercània is much more than an ingredient. It is a brand committed to responsible food innovation, circular economy, and sustainable management of Mediterranean forests. We revalue a local natural resource, traditionally underused, and put it at the service of the food industry seeking to move toward more sustainable models.
FROM FOREST TO PLATE
EVERY ACORN THAT REACHES YOUR TABLE HAS FOLLOWED A PATH GUIDED BY EXPERT HANDS, RESPECTFUL PROCESSES, AND A STRONG COMMITMENT TO THE LAND. THIS IS OUR JOURNEY, FROM THE MEDITERRANEAN FORESTS TO YOUR HOME.

“THE FOREST IS NOT A MUSEUM” (Ernst Götsch)
The Iberian Peninsula has thousands of hectares of holm oak forests and dehesas (Quercus ilex), ecosystems that have shaped the Mediterranean landscape for millennia. These forests regulate the water cycle, prevent erosion, store carbon, and host exceptional biodiversity.
But they are also productive landscapes, where people actively participate through timber use, firewood, silvopasture, and the harvesting of mushrooms and wild fruits. These activities, integrated into sustainable forest management, help prevent wildfires and keep forests healthy and productive.
Harvesting acorns is, ultimately, a way to give economic value to forests and ensure their long-term conservation. We work with forest owners and managers who share our vision: living, productive, and respected forests.
FROM TREE TO FACTORY
Acorn harvesting begins in November. We maintain traditional methods while also experimenting with mechanized harvesting to make the process more efficient.
One of our main priorities is ensuring full traceability at all times. Each batch of acorns can be tracked from the forest to the final product, ensuring transparency and quality.
Before processing, we carefully select and remove any acorns in poor condition. This step is key to preserving quality and flavor.

INDUSTRIAL PRODUCTION
Our facility is located in Alcover, where we process acorns into different formats:
- Washing – Thorough cleaning upon arrival.
- Drying – A process that reduces tannins and removes astringency.
- Peeling – Removing the shell to prepare the kernel.
- Milling – Turning them into flour or granules.
The entire process complies with the strictest European food safety standards.
QUALITY CONTROL AND PACKAGING
Our facilities are used exclusively for acorn processing. This allows us to avoid any cross-contamination and ensure that our products are 100% acorn: no additives, no preservatives, and no traces of other ingredients.
Once the final product is obtained, it is regularly analyzed to ensure consistent quality.
The product is then packaged and stored under optimal conditions until delivery to the client.
